Das Weingut San Roman gehört zu den Stars der D.O. Toro und wird von der Bodega Mauro geleitet. Der San Roman Cartago Paraje del Pozo ist der Schatz vom Starönologen Mariano Garcia, der 30 Jahre bei Vega Sicilia als Chefönologe gearbeitet hat. Der Wein besteht aus über 50 Jahre alten Reben des Tinta de Toro (ein örtlicher Tempranillo-Klon).

El Pozo - A privileged site located in Villaester and planted with oldTinta de Toro vines of over 50 years old. For Cartago, we select the grapes from a small crest of a hill at the highest point, at an altitude of 700 metres.
Vintage - A rainy cycle with rainfall well distributed throughout the year. Budbreak was rapid and full after a mild winter. May started with thunderstorms and continued with mild temperatures that allowed early flowering and an excellent fruit set. After a hot July, the thermal contrasts between maximum and minimum temperatures increased, which favoured calm ripening until the start of the harvest at the end of August.
Viticulture - On very sandy soils with clay at about 50 cm and vines planted on ungrafted rootstock, in a traditional 3x3 frame. Average yields are 2,500 kg per hectare.
Winemaking - The El Pozo grapes were harvested on 10 September with an initial manual selection in the vineyard. After a complete destemming, fermentation, and maceration, with indigenous yeasts, lasting 15 days with temperatures of up to 28ºC.
Ageing - 31 months in new and used French oak barrels.
Bottling - 3.696 bottles and 161 magnums were bottled in July 2023.

Perker: 95/100 - The dark, almost opaque red 2020 Cartago Paraje del Pozo, pure Tinta de Toro from ancient engrafted vines, is quite a bruiser, with 15% alcohol and packing abundant tannins, but the tannins are very fine and make it finer-boned than what I expected from the color and nose. It's very smoky, with toasty notes and a hint of fountain pen ink and graphite—think black. I'd still wait to pull the cork; it's going to take bottle aging to tame those tannins. The élevage was long, 31 months in new and used French oak barrels. 3,600 bottles produced. It was bottled in July 2023. This is one for the long haul.
